After leaving the team at Michelin star awarded restaurant Simply Fosh (Palma), humble and modest  Topchef Spain winner Marcel Ress is heading for new shores with his very own spot in Inca. Located in the beautifully renovated premises of a historic textile factory which is considered industrial heritage of Mallorca, Sa Fábrica combines a certain industrial charm with a modern loft ambiance. The dining area is dominated by open spaces and floor-to-ceiling glass windows. To top it all off, there’s an open kitchen so you can watch your food being freshly prepared and see the kitchen team work their magic.

Chef Marcel Ress’ idea is to process only top-quality ingredients and products and focussing on the food itself. Although the dishes are rather kept on the simple side (meaning no molecular fuss or the likes) they are put together so well, the flavors perfectly balanced and the plating beautifully executed. Since a major part of the culinary concept at Sa Fábrica is the use of fresh local produce, what’s fresher than when instantly picked and harvested from your own backyard? That said, there’s a beautiful patio where they grow their own fruits, vegetables and herbs and you can also sit and dine outside if you prefer. As far as drinks are concerned there’s a selection of various Majorcan wines and consistent with their concept they even have their own home-brewed beer.

The menu changes very often, I believe on a daily basis or at least every couple of days and it makes you want to come back to try all the new creations. What’s best is that the philosophy at Sa Fábrica is to bring simple and traditional cuisine made with first-class products to suit every budget, so menus are available for as little as 15€ (if you visit during lunch). There are not many places that can claim this but as a matter of fact you can get top notch quality dishes and Michelin-worthy cuisine at very affordable prices.

All this together makes it easily one of my top favorite spots on the island. The staff were friendly, the drinks good and the food superb. After drinking all that wine from the pairing and some pre-dinner spritz it was in fact a little hard to even take clear pictures and remember all the details of what the waiter explained about the dishes 😅 but with a little help from my friends I managed to set up a recap of the menu for you. My favorite was the pork with umami black garlic essence (who would have thought) and a fruity blackberry salsa, but everything was just amazing. Another item I didn’t know exists and that I’ve completely fallen in love with is the pancetta crumble that perfectly complemented the butterfish. We really spent a wonderful evening there and I can’t wait to get back.

  • lime sorbet | basil emulsion | dried fruits crumble

We had a wine pairing for additional 20€ consisting of a selection of 5 Majorcan wines.
